Phil Collins recipe

Like the Bloody Mary, everyone has their own way of making a Tom Collins, so make your best Tom Collins, except substitue Peach Schnapps for the gin. The amounts and method above make a fairly mild and sweet, but successfully balanced drink. Using a smaller highball glass will strengthen it.

This was invented by me, Tim Shriver, at the Phi Mu Alpha House at Illinois Wesleyan University in Bloomington, Illinois. It seems to be very popular among the few who get to try this drink. I named this drink after a friend of mine, Phil, who loves his Peach Schnapps.

2 oz peach schnapps
1/2 oz lemon juice
4 oz club soda
1 maraschino cherry
1 orange slice

Build this drink in order in an ice-filled collins glass. Stir the Peach Schnapps and lemon juice briefly in the serving glass. The 4 oz of club soda is an approximation. The size of the glass and ice cubes may change the exact proportions. It is intended that the remainder be filled. Sour Mix to taste is optional also. Garnish with a cherry and orange slice.
